Avocado Mac & Cheese
What’s better than a bowl of creamy mac and cheese for a cozy dinner night?
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions.
Step 2
Bring water to a boil in a pot. Add salt, olive oil, and macaroni pasta. Stir and cook for about 8-10 mins until al dente. Drain and set aside.
Step 3
Meanwhile, make the avocado sauce by putting half the garlic, avocado pulp, lemon juice, cilantro, salt, and pepper into a food processor or blender. Mix until the mixture is smooth and creamy. Set aside.
Step 4
To make the cheese sauce, place butter in a saucepan and heat over medium heat. Once melted, add in cream and stir until the sauce thickens. Then, add in Pepper Jack Cheese and stir until the cheese melts. Finally, add mozzarella cheese.
Step 5
In a hot pan, drizzle olive oil and cook the remaining garlic and onions until slightly brownish. Turn the heat on low and add in the pasta and avocado sauce and stir until well-coated. Finally, stir in the cheese sauce and season to taste. Serve warm and garnish with cilantro leaves. Enjoy!
