Avocado Cupcakes
Fluffy avo-cake topped with creamy avo-frosting. This is avo-thing you’ll ever need in a cupcake!
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions.
Step 2
Preheat oven to 170C. Line a muffin tray.
Step 3
With an electric mixer, beat together coconut oil, avocado, and sugar. Then, add egg and coconut milk. Beat until fluffy. Fold in flour, baking powder, baking soda, and salt. Beat until incorporated.
Step 4
Spoon batter into the muffin tray, leaving at least an inch for them to rise. Bake for 30-35 minutes. Remove from oven and let cool on a metal rack.
Step 5
To prepare avocado frosting: Place cold whipping cream, avocado, powdered sugar, and lime in a bowl. Beat well with an electric mixer until soft peaks form.
Step 6
Place frosting in a piping bag and top the cupcakes. Add sprinkles if desired. Enjoy!
