National Pie Day: How to Make Avocado Pie

Happy National Pie Day! These delicious pastries filled with various stuffing--from sweet compotes to savory roasts--have been around for centuries, and are still loved by many around the globe. But how did this day become so special for pie lovers everywhere and how can you celebrate it?
National Pie Day was actually created by a nuclear engineer from Colorado, Charlie Papazian. He had allegedly declared that today would be his birthday, and that it would also be known as the day to celebrate all-things-pie! To honor Papazian and all the delicious pies out there, try this easy Avocado Pie recipe that requires no baking and no stressful avocado prep work!
Ingredients
300g Avocado Pulp, Frozen
125g plain Greek yogurt
Half a can of condensed milk
For the crust
170g Graham crackers crumb
100g butter, melted
Instructions
Thaw Avocado Pulp, Frozen according to package instructions. Set aside.
To make the pie crust, combine Graham cracker crumbs and butter. Use a fork to stir until the mixture becomes moist.
Press the mixture into a springform pan evenly, covering the sides well. Cover with cling wrap and chill in the refrigerator until ready to use.
In a blender or a food processor, combine avocado, yogurt, and condensed milk until smooth.
Pour batter into the pie crust and smooth the top with a spatula. Chill in the fridge overnight. Keep in the fridge until ready to serve. Enjoy!
