How to Utilize Artificial Intelligence for Restaurant Operations

Artificial Intelligence (AI) technology has yet again transformed the restaurant industry. This time, AI recipe generators are being utilized by back-of-house operations to reduce the time involved in writing new recipes, creating alternatives, analyzing nutritional value, or creating a food-waste reduction strategy.

The industry is leveraging several AI recipe generators, namely DishGen, Let’s Foodie and the popular ChatGPT. To let you know how they can work, we’ve prompted them to create a dish using the same three ingredients—frozen seabass, avocado, and tomato.

DishGen

ChatGPT

Because this AI tool has the ability to search out and synthesize information much like humans do when looking for inspiration, we asked ChatGPT to come out with a recipe that uses the same three ingredients but with a Greek influence and in Michelin Style. Here’s the result:

Seabass with Avocado-Tomato Tzatziki

This Michelin-style recipe combines the richness of seabass with a refreshing Greek twist. You’ll enjoy perfectly pan-seared seabass fillets served on a bed of creamy avocado-tomato tzatziki, complemented by a zesty lemon-dill sauce and a garnish of Kalamata olives and feta cheese.

Ingredients

(For the Seabass)

  • 4 fresh seabass fillets (6-8 ounces each)

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper to taste

(For the Avocado-Tomato Tzatziki)

  • 2 ripe avocados, peeled, pitted, and diced

  • 2 ripe tomatoes, diced

  • 1 cucumber, peeled, seeded, and finely grated

  • 1 cup Greek yogurt

  • 2 cloves garlic, minced

  • 1 tablespoon fresh dill, chopped

  • Juice of 1 lemon

  • Salt and freshly ground black pepper to taste

(For the Lemon-Dill Sauce)

  • 1/2 cup Greek yogurt

  • Zest and juice of 1 lemon

  • 2 tablespoons fresh dill, chopped

  • Salt and freshly ground black pepper to taste

(For Garnish)

  • Kalamata olives, pitted and sliced

  • Feta cheese, crumbled

  • Fresh dill sprigs

Instructions

1. Prepare the Lemon-Dill Sauce:

In a bowl, combine the Greek yogurt, lemon zest, lemon juice, and chopped dill.

Season with salt and freshly ground black pepper to taste.

Stir well to incorporate all the ingredients.

Cover and refrigerate the sauce until serving.

2. Prepare the Avocado-Tomato Tzatziki:

In a large mixing bowl, combine the diced avocados, diced tomatoes, finely grated cucumber, Greek yogurt, minced garlic, fresh dill, and lemon juice.

Season with salt and freshly ground black pepper to taste.

Gently fold the ingredients together until well combined.

Cover the bowl and refrigerate the tzatziki while you prepare the seabass.

3. Cook the Seabass:

Pat the seabass fillets dry with paper towels and season them generously with salt and freshly ground black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Once the oil is hot, carefully add the seabass fillets, skin side down.

Sear the seabass for 3-4 minutes on the skin side until it’s golden and crispy.

Flip the fillets and cook for an additional 2-3 minutes on the flesh side until they are cooked through but still moist.

Remove from heat.

4. Assemble the Dish:

Spoon a generous portion of the avocado-tomato tzatziki onto each plate, creating a bed for the seabass.

Carefully place a seabass fillet on top of each tzatziki bed, skin side up.

Drizzle the lemon-dill sauce over the seabass and around the plate.

Garnish with Kalamata olives, crumbled feta cheese, and fresh dill sprigs for an authentic Greek touch. Serve and enjoy.
