How To Make Avocado-Stuffed Meatballs

Happy National Meatball Day! Let’s celebrate these juicy and meaty spheres by making something better than those—avocado-stuffed meatballs!

Ingredients

  • 150g Simplot Harvest Fresh Avocados Avocado Pulp

  • 1kg lean ground beef

  • 40g tomatoes, chopped

  • 1 tbsp Dijon mustard

  • 1 tsp dried basil

  • 1 tsp salt

  • 1 tbsp lemon juice

  • 2 tsp cooking oil

Instructions

  1. Thaw Simplot Harvest Fresh Avocados Avocado Pulp until slightly soft to scoop.

  2. Preheat oven to 200c.

  3. In a large bowl, combine beef, tomatoes, mustard, basil, salt, and lemon juice. Form the meatballs by rolling approximately golf-sized balls in your palms. Set aside.

  4. Scoop out a small portion of avocado pulp. Create a divot in the meatballs and stuff them with the avocado. Pinch the edges to seal them in.

  5. Heat oil in a pan over medium heat.

  6. Add meatballs and cook until slightly browned on all sides for about 1-2 minutes.

  7. Transfer the browned meatballs to a lined baking pan or tin foil. Cook in the oven for 10-15 minutes.

  8. Serve immediately. Enjoy!
