Tasmanian Pepperberry Cauliflower Bites With Finger Lime Dipping Sauce

Native pepperberry adds spice to battered cauliflower pieces served with a finger lime mayonnaise.
Instructions:
Step 1
Mix mayonnaise and finger lime pearls. Set aside.
Step 2
Steam frozen Edgell Cauliflower Florets following packet directions, drain excess water and leave to cool.
Step 3
Combine self raising flower, corn flour, half the pepperberry and soda water. Coat cauliflower in batter and deep fry for 3 minutes. Serve with mayonnaise and garnish with remaining pepperberry and parsley.
