A vibrant Mexican inspired spiced rice, served with a chipotle yoghurt dressing and topped with crispy battered prawn pops.
Instructions:
Char frozen Edgell Corn, diced capsicum and rice with seasoning.
Combine with Edgell Black Beans, avocado, onion and coriander.
Cook frozen I&J Prawn Pops following packet directions.
Top rice with prawn pops. Serve with chipotle yoghurt dressing.
