Tender carrots roasted in a tangy citrus mustard glaze.

Simplot Simple Goodness™: Sliced Carrots, Smooth 12/2lb 2.5 lbs. 5 cups
Vegetable oil 2.6 fl. oz. 1/3 cup
Orange juice 4 fl. oz. 1/2 cup
Brown sugar 5.8 oz. 3/4 cup
Butter, unsalted 5.3 oz. 2/3 cup
Mustard, Country Dijon 1.6 oz. 1/3 cup
White pepper, ground 1 1/2 tsp.
Parsley, fresh, finely chopped 2 Tbsp.
Preparation Instructions:
Step 1
Preheat convection oven to 400˚F.
Step 2
Toss carrots in oil to coat. Spread on a full sheet pan in a single layer. Bake in convection oven until tender and brown on edges.
Step 3
In a large pan, add orange juice, brown sugar, butter, mustard, and pepper. Cook over low heat and stir until well combined. Add roasted carrots to sauce and continue to cook until desired doneness. Sprinkle with parsley. Hold hot for service.
Step 4
To serve; place 1/2 cup portion of sauced carrots on serving dish.
