- To Rehydrate:
OVERNIGHT: Fill container to fill line with very hot water (140°to 160°). Close container and refrigerate overnight. Arrange cartons at least 1” apart. 10 MINUTE: Fill container to fill line with very hot water (180°to 190°). Close container and let stand at room temperature for 10 minutes. 30 MINUTE: Fill container to fill line with hot water (140°to 160°). Close container and let stand at room temperature for 30 minutes. NOTE: When ready to use, drain potatoes, transfer to holding pan and fluff. Hydrated hash browns store for up to 3 days when properly refrigerated below 40°F.
- To Prepare:
GRIDDLE PREPARATION:Arrange a thin layer of hash browns on a well-oiled griddle (350°F to 400°F). Cook for 3 to 4 minutes or until golden brown. OVEN PREPARATION: Arrange HYDRATED potatoes in full-size steam table pan. Drizzle with 1½ cups (12 oz) melted butter, margarine or oil. Stir. Layer evenly about 1 inch thick. Sprinkle with seasonings as desired (Salt, pepper, onion salt, garlic salt, paprika.) CONVECTION OVEN: at 450° for 8 to 10 minutes. STANDARD OVEN: at 525°F for 12 to 15 minutes
